Class 506 - Ginger Cake (the winner of this class from last year cannot enter this class)

Ingredients:

  • 100g butter/soft margarine 
  • 100 dark brown/muscavado sugar 
  • 175g Self-raising flour 
  • 4 tsp ground ginger 
  • 175g Golden syrup 
  • 300g (approx.) jar stem ginger in syrup (separate and chop 150g of ginger, retain syrup) 
  • 2 large eggs 
  • 1 inch fresh ginger, peeled and finely diced/grated 
  • 75g icing sugar

Method:

  • Preheat oven to fan 160C / Gas 2 
  • Grease a 23cm loaf tin (use greaseproof paper liner) 
  • Cream butter and sugar together with a pinch of salt until light and fluffy 
  • Pour in golden syrup and 1tbsp of ginger syrup 
  • Mix to combine 
  • Beat in eggs a little at a time 
  • Gradually add the flour 
  • Stir in fresh ginger and chopped stem ginger
  • Spoon into loaf tin and level 
  • Bake for 50-60 mins until skewer comes out clean 
  • Whilst cooling, make icing with icing sugar and remaining 2tbsp of ginger syrup (add a little cold water if necessary) 
  • Drizzle icing over top of cake once cool and decorate with more chopped stem ginger if desired
